Hello Everyone and welcome to a Tasty Tuesday easy recipe day. I make this dish about once every other week for a lunch prep. I timed it today and it took 23 minutes to prepare and I will get 3 - 4 lunches with it. So Lets Go!
What to Buy:
These are 3 of the staples to make this dish work. All from Aldi's
- Great Northern Beans
- Tikka Masala Sauce
- Coconut Milk
- Rice
(I use Jasmine Rice because its my favorite).
Prepping:
Step 1: Gather Veggies
- Whatever you have in your fridge. So today I choose Zucchini, Peppers, Onion and Garlic.
Step 2: Slice and Chop your Veggies
- I slice them this way because I don't like Large Veggies chunks
Step 3: Open and Cook
- Rice: 1 Cup of Rice, 2 cups of Coconut Water / Water & Green Onions. Place on stove, bring to boil, cover, turn down to simmer & cook for 15 minutes. WATCH THE RICE. Coconut water absorbs quicker than water so watch the rice .
- Veggies: Sautee on Med heat till browned and then add the beans and Sauce. Let it strew together for a few minutes till it thickens.
Step 4: Eat & Enjoy
- Add whatever topping you would like, but I personally like Avocado and sometimes I might add some plain Greek yogurt!
